Ingredients:

  • 1 cup cooked quinoa
  • 2 cups chopped kale
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup diced red onion
  • 1/4 cup sunflower seeds
  • 1 avocado, diced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions:

  1. In a large bowl, combine cooked quinoa, kale, cherry tomatoes, red onion, sunflower seeds, and avocado.
  2. Drizzle with olive oil and lemon juice, and toss to combine.
  3. Season with salt and pepper to taste.
